S&P stands for Salt and pepper, a cooking abbreviation.
Kitchen and recipe shorthand for seasoning with salt and freshly ground black pepper, the two seasonings most Western recipes assume are on hand. Prep lists and recipe cards often write "S&P to taste".
Example: Toss the potatoes with oil and S&P, then roast at 425°F for 35 minutes.
Usage notes
Pronounced as letters, "S and P". Salt type matters when converting: a teaspoon of Diamond Crystal kosher salt weighs about half as much as a teaspoon of table salt, so swapping one for the other can double the saltiness. Outside the kitchen, the same letters usually refer to the S&P 500 stock index or the Standard & Poor's rating agency.
