BBQ stands for Barbecue, a cooking abbreviation also used in general use.
Slow cooking over low, indirect heat and wood smoke, and the foods and gatherings built around it, especially in the American South. BBQ appears on restaurant signs, menus, sauce bottles and party invitations.
Example: Saturday BBQ at our place: brisket, ribs and potato salad, bring a side.
Usage notes
The word comes from Spanish barbacoa, from a Taino word for a raised wooden frame. Major American regional styles include Texas (beef brisket), Kansas City (sweet tomato sauce), Memphis (dry-rubbed ribs) and the Carolinas (pulled pork with vinegar or mustard sauces). Variant spellings include barbeque and Bar-B-Q; in Britain and Australia a barbecue (or barbie) usually means grilling outdoors.
